1/2 green or red pepper, chopped
1/4 cup white vinegar
3 tbsp sugar
1/2 tsp pickling spice
1/2 tsp salt
1 tbsp cornstarch

6 honey and garlic OR European sausages
6 hot dog buns
12 slices of Bothwell Mild Cheddar Cheese
1/4 cup fresh herbs of your choice: basil, dill, cilantro or chives, chopped

1. In a saucepan, mix corn relish ingredients together, except the cornstarch.
2. Bring to a boil and let simmer on medium-high heat for 10 min. Mix cornstarch in 1/4 cup water. Stir into the saucepan and let mixture thicken. Remove from heat and let cool.
3. To cook sausages, preheat grill to medium heat or oven to 425 degrees fahrenheit and cook for 10-15 minutes or until well done.
4. Open buns, and top with cheese slices. Place on the grill or over rack and heat until cheese melts. Remove from the grill.
