The importance of differentiating Canadian pork from its international competition was stressed at the Manitoba Swine Seminar this week. Ted Bilyea, Agri-Food Consultant and former President of Maple Leaf Foods, says the Canadian pork industry should focus on selling into niche, high-priced markets, rather than low-value markets in developing countries. He says traceability, the ability to track animals through the supply chain, will be key. Once the traceability system is secure, Bilyea says the industry will have the ability to target specific niche markets around the world. He says the industry should also aim at owning the Canadian market, saying pork producers could learn from the "Made in Canada" little blue cow logo used by the Dairy Farmers of Canada.
